Crock Pot Breakfast Scramble


Our family enjoyed the following recipe this morning:
Crock Pot Breakfast Scramble

About 2 pounds of shredded potatoes, hashbrowns, or crumbled tater tots
1 pound cooked sausage, ham, or bacon. (you can use a combination if you like)
1/2 - 3/4 cup onion (choppped) or about 1 tsp onion powder
1/2 -3/4 cup bell pepper (chopped)
2 cups cheese (we used more)
12 eggs
1 cup milk
1 cup (8oz) cream cheese
1/2 tsp dry mustard
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp garlic powder

I coated the inside of my crockpot with oil first (you could spray it with non-stick spray). I then put in half of the following in the order listed: potatoes, meat, onion, and bell pepper. I then topped my layers with half of the cheese. I then repeated the layers with the other half of each item.

I mixed the eggs, milk, cream cheese, mustard, salt, pepper, and garlic powder and poured it evenly over the top. Put the lid on it. Set on low temperature for 8 hrs.

It tasted delicious and had a nice consistency.
