As promised, another of the cookie recipes....
Ingredients Needed:
2 cups sugar
1 cup butter
2 eggs, beaten
1 cup molasses
1 tsp vanilla extract
6 cups all-purpose flour (you can use the unbleached)
3 tsp baking soda
1 tsp salt
3 tsp ground cinnamon
2 tsp ground ginger
2 cups buttermilk
1 cup chopped nuts
Preheat oven to 375 degrees and place rack in center of oven.
Lightly grease cookie sheets or line them with parchment paper.
In large bowl, beat together the sugar and shortening until creamy. Add eggs, molasses, and vanilla. Beat well. This will be your sugar mixture.
In separate bowl, combine flour, baking soda, salt, cinnamon, and ginger until well mixed. This will be your flour mixture.
Alternately add the flour mixture to the sugar mixture with buttermilk. Start with the buttermilk. Do so until all is mixed together and well mixed.
Stir in nuts.
Drop cookie dough by the teaspoonful onto the cookie sheet. Space about 2 inches apart.
Bake for ten minutes or until the edges are golden. After removing from the oven, let the cookies cool for about 5 minutes before removing from the cookie sheet. Allow them to cool completely before serving.
Makes approximately 10 dozen cookies.
